Uppu Seedai

Seedai is a traditional Indian snack that can be made sweet or savory. It’s so crisp and a perfect snack . It is made mostly during Krishna Jayanthi / Gokulashtami.

Uppu Seedai is a savory version and is prepared by using home made rice flour mixed with Urad dal flour and sesame seeds.

Ingredients (Serves 3)

Soaking time – 1 hour
Preparation time – 10 mins
Cooking time – 30 mins
  • Raw rice – 1 cup
  • Urad dal flour – 2 tbsp
  • Sesame seeds – 1 tsp
  • Red chilli powder – 1/4 tsp
  • Hing – a generous pinch
  • Ghee – 2 tbsp
  • Salt – as needed
  • Oil – to deep fry


  • Soak raw rice for an hour.
  • Drain the water and dry them on a cotton/ muslin cloth.
  • Powder the rice nicely in a mixer.
  • Dry roast the flour in a pan to take out moisture.
  • Sieve the flour and store the rice flour in a air tight container.
  • In a bowl, add rice flour, sesame seeds, red chilli powder, hing, ghee and salt.
  • Add water carefully and prepare the dough.
  • Make small balls of the dough and let it dry.
  • Heat oil to deep fry, drop the balls in batches when the oil is hot.
  • Fry in medium flame till the colour changes.
  • Drain the excess oil using kitchen towel.
  • Store in a air tight container. Stays good for more than a week.

Key Points

  • A cup of raw rice yielded approx 2 cups of rice flour.
  • To prepare the urad dal flour, dry roast urad dal till golden brown. Cool down and powder it. Sieve the flour and store it in a air tight container.
  • You can use store bought Idiyappam flour / rice flour instead of the homemade rice flour.
  • To avoid bursting, just let the balls to dry a little before dropping in oil.
  • You can also pierce small holes in the ball dough to avoid bursting.
